4 boneless, skinless chicken breasts

1 cup plain Greek yogurt

1 cup feta cheese, crumbled

3 tablespoons hot honey (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup Panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, mix together Greek yogurt, half of the crumbled feta, hot honey, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken breasts and coat well. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

    Prepare the Breading Stations: In three separate shallow dishes, place the flour in the first, beaten eggs in the second, and Panko breadcrumbs mixed with remaining feta in the third.

      Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

        Bread the Chicken: Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in flour, shaking off excess. Dip into the eggs, then press into the Panko and feta mixture, ensuring it's thoroughly coated.

          Bake the Chicken: Place the breaded chicken on the prepared baking sheet. Drizzle a little olive oil over the top for extra crispiness. Bake in the preheated oven for about 25-30 minutes, or until the chicken is golden brown and an internal temperature of 165°F (75°C) is reached.
