Creamy Vegetable Casserole – Easy Comfort Food Side Dish

This creamy vegetable casserole – easy comfort food side dish is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

2 cups mixed vegetables (broccoli, carrots, and cauliflower)

1 cup sliced mushrooms

1 cup cooked quinoa or rice

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream or Greek yogurt

1 cup shredded cheddar cheese (plus extra for topping)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat olive oil over medium heat. Add the mixed vegetables and mushrooms, cooking until they're just tender, about 5-7 minutes. Season with salt, pepper, garlic powder, onion powder, and thyme.

      In a large bowl, combine the cream of mushroom soup, sour cream, and cooked quinoa or rice. Mix until well combined.

        Add the sautéed vegetables to the soup mixture and fold in the shredded cheddar cheese until evenly coated.

          Transfer the vegetable mixture to a greased 9x13 inch casserole dish, spreading it evenly.

            If desired, sprinkle breadcrumbs and additional cheese on top for extra crunch and flavor.

              Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and the top is golden brown.

                Once done, remove from the oven and let it cool for a few minutes before serving.
