12 oz (340g) fettuccine or your preferred pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juice)

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and black pepper, to taste

1/2 cup grated Parmesan cheese

1 cup fresh spinach, roughly chopped

Fresh basil leaves, for garnish

Red pepper flakes (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté Garlic: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Tomatoes: Stir in the diced tomatoes (with juice) and bring to a simmer. Cook for about 5 minutes, allowing the flavors to meld.

        Create the Sauce: Lower the heat and stir in the heavy cream and Italian seasoning. Mix well and let it simmer for another 3-5 minutes until the sauce is creamy and slightly thickened.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it in the sauce. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.

            Incorporate Spinach: Stir in the chopped spinach and warm through until wilted.

              Finish with Cheese: Add the grated Parmesan cheese, mixing well to incorporate it into the sauce. Season with salt, black pepper, and red pepper flakes (if using) to taste.
