Creamy Sun-Dried Tomato Pasta

Ingredients
  

8 oz (225 g) of your favorite pasta (such as fettuccine or penne)

1 cup sun-dried tomatoes in oil, drained and roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: 1 cup spinach or arugula for added greens

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes.

        Make it Creamy: Lower the heat and pour in the heavy cream. Stir well and let it simmer for about 3-4 minutes until the sauce begins to thicken.

          Incorporate Cheese and Herbs: Add the grated Parmesan cheese, dried basil, dried oregano, salt, and pepper. Stir continuously until the cheese melts and the sauce is smooth.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet. Toss well to coat the pasta in the sauce, adding reserved pasta water a little at a time to reach your desired sauce consistency.

              Add Greens (Optional): If using spinach or arugula, stir it in at this stage until wilted and thoroughly mixed with the pasta.

                Serve: Plate the creamy sun-dried tomato pasta, garnish with fresh basil leaves, and add extra Parmesan if desired.
