Creamy Rotel Pasta with Ground Beef

Ingredients
  

12 oz. (340g) pasta (fusilli or penne work well)

1 lb (450g) ground beef

1 can (10 oz.) Rotel diced tomatoes with green chilies (mild or spicy, depending on preference)

8 oz. (227g) cream cheese, softened

1 cup (240ml) beef broth

1 cup (100g) shredded cheddar cheese

1 medium onion, diced

3 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and minced garlic. Sauté for about 2-3 minutes until fragrant and translucent.

      Add Ground Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned and fully cooked, breaking it apart with a spatula; this will take about 5-7 minutes.

        Season the Mixture: Once the beef is browned, stir in the chili powder, cumin, salt, and pepper. Mix well to incorporate the spices.

          Combine with Rotel: Pour in the can of Rotel (with juices) and the beef broth. Bring to a simmer, allowing the flavors to meld for about 2-3 minutes.

            Add Cream Cheese: Lower the heat to medium-low. Add the softened cream cheese to the skillet, stirring until it melts and creates a creamy sauce. Ensure it’s mixed evenly.

              Mix in Pasta: Add the drained pasta to the mixture. Toss everything together ensuring the pasta is well coated in the creamy sauce.

                Cheese it Up: Sprinkle the shredded cheddar cheese over the pasta and stir until it’s melted and combined into the dish. Adjust seasoning if necessary.

                  Serve: Garnish with fresh cilantro or parsley if desired, and enjoy your creamy Rotel pasta while hot!
