1 cup coarse cornmeal (polenta)

4 cups vegetable broth (or chicken broth)

1 cup whole milk

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh herbs (like thyme or parsley) for garnish

Instructions
 

In a large pot, bring the vegetable broth to a gentle simmer over medium heat.

    Slowly whisk in the cornmeal, stirring continuously to avoid lumps. Reduce the heat to low.

      Allow the polenta to cook, stirring frequently, for about 25-30 minutes until it thickens and pulls away from the sides of the pot.

        Stir in the milk and heavy cream, mixing well to achieve a creamy consistency.

          Add the grated Parmesan cheese, butter, garlic powder, onion powder, salt, and pepper. Mix until everything is combined and the cheese has melted.

            Taste and adjust the seasoning as desired.

              Remove from heat and let sit for a few minutes to thicken further.

                Serve warm, garnished with fresh herbs on top.
