Creamy Parmesan Spinach Rice

Ingredients
  

1 cup Arborio rice

3 cups vegetable broth

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

1 medium onion, finely chopped

3 cloves garlic, minced

1/2 cup heavy cream

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

1/4 cup pine nuts, toasted (optional)

Fresh parsley, for garnish

Instructions
 

In a medium saucepan, heat the vegetable broth over low heat. Keep it warm while preparing the rice.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the Arborio rice to the skillet and stir well to coat the grains with oil. Cook for about 2 minutes, allowing the rice to lightly toast.

          Begin adding the warm vegetable broth one ladle at a time, stirring constantly. Allow the liquid to absorb before adding more broth. Continue this process for about 20 minutes or until the rice is creamy and al dente.

            Once the rice is nearly done, stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.

              Reduce the heat to low and mix in the heavy cream, grated Parmesan cheese, salt, black pepper, and nutmeg. Stir until the cheese is melted and everything is well-blended.

                Taste and adjust seasoning if necessary. If desired, sprinkle in toasted pine nuts for added texture and flavor.
