Ingredients

1 lb boneless, skinless chicken breasts

1 cup orzo pasta

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 medium onion, diced

2 cups fresh spinach, chopped

1 teaspoon Italian seasoning

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Prep the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet, let rest, and then slice into strips.

Sauté Veggies: In the same skillet, reduce heat to medium and add the diced onion. Sauté until translucent, about 2-3 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Cook the Orzo: Stir in the orzo and cook for about 1-2 minutes to toast it lightly. Then, pour in the chicken broth and bring to a simmer. Cook the orzo according to package instructions until al dente, approximately 8-10 minutes.

Make it Creamy: Once the orzo is cooked, stir in the heavy cream and Parmesan cheese, mixing until well combined. Add the chopped spinach, cooking until just wilted, about 2 minutes.

Combine and Serve: Return the sliced chicken to the skillet, stirring to coat in the creamy orzo mixture. Adjust seasoning with additional salt and pepper if needed.

Garnish & Serve: Serve hot, garnished with fresh parsley if desired.
