1 pound linguine pasta

1 pound boneless, skinless chicken breast, cut into bite-sized pieces

2 tablespoons Cajun seasoning

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, diced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup baby spinach

Salt and pepper to taste

Fresh parsley, chopped for garnish

Lemon wedges for serving (optional)

Instructions
 

Season the Chicken: In a bowl, toss the chicken pieces with Cajun seasoning, ensuring every piece is well-coated. Set aside.

    Sauté the Chicken: In a large pot or deep skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook until golden brown and cooked through, about 7-10 minutes. Remove the chicken from the pot and set aside.

      Sauté the Vegetables: In the same pot, add the diced onion and sauté for 2-3 minutes until soft. Add the minced garlic and cook for another 30 seconds until fragrant.

        Deglaze the Pot: Pour in the chicken broth, scraping the bottom of the pot to release any flavorful bits. Bring to a simmer.

          Cook the Linguine: Add the linguine to the pot, ensuring it’s submerged in the broth. Cover and cook for about 8-10 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

            Make it Creamy: Once the pasta is cooked, lower the heat and stir in the heavy cream, grated Parmesan cheese, cooked chicken, cherry tomatoes, and baby spinach. Mix well until everything is creamy and heated through. Season with salt and pepper to taste.

              Serve: Garnish with fresh parsley and serve with lemon wedges on the side if desired.
