1 pound boneless, skinless chicken breasts

1 cup diced onions

2 cloves garlic, minced

2 cups diced carrots

2 cups diced celery

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon olive oil

Salt and pepper to taste

1 cup frozen peas

Fresh parsley for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook the Chicken: Add the chicken breasts to the pot and season with salt, pepper, thyme, and rosemary. Cook for about 5 minutes on each side until nicely browned. Remove the chicken from the pot and set aside.

      Add Vegetables: In the same pot, add the diced carrots and celery. Sauté for another 5 minutes until they start to soften.
