12 oz fettuccine pasta

2 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup spinach, chopped

1 cup cherry tomatoes, halved

1 tsp garlic powder

1 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

      Create the Cream Sauce: Pour in the heavy cream, stirring occasionally. Reduce the heat to low and add the grated Parmesan cheese gradually, whisking until smooth and creamy.

        Add Vegetables: Stir in the chopped spinach and cherry tomatoes. Allow them to cook for about 3-4 minutes until the spinach wilts and the tomatoes soften.

          Combine Pasta and Sauce: Add the drained fettuccine to the sauce, and toss to combine. If the sauce is too thick, gradually mix in some reserved pasta water until reaching desired creaminess.

            Season: Sprinkle in the garlic powder, red pepper flakes (if using), and season with salt and pepper to taste. Toss everything gently to ensure even coating.
