200g udon noodles

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sesame oil

1 cup coconut milk

1 tablespoon soy sauce

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon brown sugar

1 small zucchini, julienned

1 cup baby spinach

2 green onions, sliced

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Udon Noodles: In a large pot of boiling water, cook the udon noodles according to package instructions until they are tender. Drain and set aside.

    Prepare the Sauce: In a medium bowl, whisk together gochujang, sesame oil, coconut milk, soy sauce, rice vinegar, minced garlic, grated ginger, and brown sugar until smooth and well combined.

      Sauté the Vegetables: In a large skillet over medium heat, add a splash of sesame oil. Once hot, add the julienned zucchini and sauté for about 2-3 minutes until slightly tender. Stir in the baby spinach and cook for an additional minute until wilted.

        Combine Noodles and Sauce: Add the cooked udon noodles to the skillet with the vegetables. Pour the gochujang sauce over the noodles and toss everything together until the noodles are well coated and heated through.
