12 oz penne pasta

2 tbsp olive oil

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup heavy cream

1 cup whole milk

1 cup grated fresh Parmesan cheese, plus extra for topping

1 cup shredded mozzarella cheese

1 tsp dried Italian herbs (basil, oregano, thyme)

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup fresh spinach (optional)

1/2 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta until al dente according to package instructions. Drain and set aside.

      Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to burn it.

        Make the Cream Sauce: Lower the heat to medium-low. Pour in the heavy cream and milk, stirring to combine. Add the grated Parmesan cheese, shredded mozzarella cheese, dried Italian herbs, red pepper flakes (if using), salt, and pepper. Stir until the cheese has melted and the sauce is creamy.

          Combine Pasta and Sauce: Add the cooked penne pasta to the skillet, stirring to coat the pasta evenly with the creamy sauce. If using, fold in the fresh spinach until just wilted.
