Creamy Chicken Broccoli Rice Cheese Casserole

Ingredients
  

2 cups cooked chicken, shredded or diced

2 cups broccoli florets (fresh or frozen)

1 cup uncooked rice (white or brown)

3 cups chicken broth

1 cup shredded cheddar cheese

1 cup cream of chicken soup (or homemade equivalent)

1 cup sour cream

1 small onion, diced

2 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt (to taste)

1/2 teaspoon black pepper

1/2 cup breadcrumbs (optional for topping)

2 tablespoons olive oil or butter

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the rice: In a medium saucepan, bring 3 cups of chicken broth to a boil. Add the uncooked rice and reduce the heat to low. Cover and let it simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed. Set aside.

      Sauté the vegetables: Heat the olive oil or butter in a large skillet over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent, about 3-4 minutes.

        Combine ingredients: In a large mixing bowl, combine the cooked chicken, broccoli florets, sautéed onion and garlic, cooked rice, cream of chicken soup, sour cream, garlic powder, onion powder, paprika, salt, and black pepper. Stir everything until evenly combined.

          Transfer to casserole dish: Pour the mixture into a greased 9x13 inch casserole dish. Spread it out evenly.

            Add cheese: Sprinkle the shredded cheddar cheese over the top of the casserole evenly.

              Optional topping: For added crunch, sprinkle breadcrumbs on top of the cheese.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for about 25 minutes. Then remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
