12 oz fettuccine pasta

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon Cajun seasoning (adjust to taste)

Salt and pepper to taste

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), sliced

1 cup heavy cream

1 cup chicken broth

1 cup shredded Parmesan cheese

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Season the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with Cajun seasoning, salt, and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and sliced bell pepper. Sauté for about 4-5 minutes until tender. Add the minced garlic and cook for an additional 1 minute, stirring constantly to avoid burning.

        Make the Sauce: Pour in the chicken broth, scraping the bottom of the skillet to deglaze any brown bits. Stir in the heavy cream, thyme, and cooked chicken. Allow the mixture to simmer gently for about 5 minutes, until slightly thickened.

          Combine Pasta and Sauce: Add the cooked fettuccine to the skillet with the creamy sauce. Toss gently to combine, adding reserved pasta water a little at a time if necessary to reach desired creaminess.

            Add Cheese: Stir in the shredded Parmesan cheese until melted and thoroughly combined. Adjust seasoning with more Cajun seasoning, salt, or pepper if needed.
