12 oz. fettuccine or penne pasta

1 lb. chicken breast, sliced into strips

2 tablespoons Cajun seasoning

3 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, sliced (any color)

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup frozen peas

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Season the Chicken: In a medium bowl, toss the sliced chicken breast with 1 tablespoon of Cajun seasoning until evenly coated.

      Sauté Chicken: In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once hot, add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Cook Vegetables: In the same skillet, add the remaining olive oil. Sauté the diced onion, minced garlic, and bell pepper until softened, about 4-5 minutes.

          Add Cream and Broth: Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer, then add the remaining Cajun seasoning, halved cherry tomatoes, and frozen peas. Cook for an additional 5 minutes until the sauce slightly thickens.

            Combine Pasta and Chicken: Add the cooked pasta and sautéed chicken to the skillet. Toss everything together, adding reserved pasta water as needed to reach your desired creaminess. Season with salt and pepper to taste.

              Serve: Garnish with freshly chopped parsley and sprinkle with grated Parmesan cheese before serving.
