1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon Cajun seasoning

1/4 teaspoon cayenne pepper (optional, for heat)

1/2 cup buttermilk

2 large eggs, beaten

1 tablespoon green onions, finely chopped

1 cup powdered sugar (for dusting)

Oil for frying

For the Cajun Sauce:

1/2 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon hot sauce (adjust to taste)

1 teaspoon Cajun seasoning

1 tablespoon lemon juice

Prepare the Beignet Batter: In a large mixing bowl, combine the flour, baking powder, baking soda, Cajun seasoning, and cayenne pepper. Whisk together until blended.

    Add Wet Ingredients: In a separate bowl, mix the buttermilk and beaten eggs. gradually pour this mixture into the dry ingredients, stirring gently until just combined.

      Incorporate Crawfish: Fold in the crawfish and green onions, ensuring they're evenly distributed within the batter.

        Heat the Oil: In a deep pot or deep fryer, heat oil to 350°F (175°C) over medium-high heat. You'll need enough oil to fully submerge the beignets.

          Fry the Beignets: Using a small scoop or spoon, drop rounded tablespoons of the crawfish batter into the hot oil, taking care not to overcrowd the pot. Fry for 2-3 minutes until golden brown on all sides, turning occasionally.

            Drain: Remove the beignets with a slotted spoon and drain on paper towels. Dust with powdered sugar while still warm.
