8 oz (225g) cream cheese, softened

4 oz (115g) goat cheese, softened

1/4 cup (60ml) sour cream

1/4 cup (30g) dried cranberries, finely chopped

1/4 cup (30g) pistachios, shelled and chopped

1 tbsp honey

1 tsp lemon juice

1/2 tsp garlic powder

1/4 tsp salt

Fresh herbs (e.g., parsley or thyme) for garnish

Extra chopped pistachios and cranberries for rolling

Instructions
 

In a mixing bowl, combine the softened cream cheese and goat cheese using a fork or an electric mixer until smooth and well blended.

    Add the sour cream, honey, lemon juice, garlic powder, and salt to the cheese mixture. Mix until fully incorporated.

      Fold in the chopped cranberries and chopped pistachios, ensuring they are evenly dispersed throughout the mixture.

        Lay a large piece of plastic wrap on your countertop. Spoon the cheese mixture onto the center of the wrap and shape it into a log.

          Use the plastic wrap to roll the cheese log tightly, twisting the ends to secure. Refrigerate for at least 2 hours, or until firm.

            Once chilled, remove the cheese log from the plastic wrap. Roll it in extra chopped pistachios and cranberries, pressing gently to adhere them to the surface.

              Transfer the cheese log to a serving platter and garnish with fresh herbs if desired.

                Slice and serve with crackers, toasted baguette slices, or fresh vegetables for dipping.
