Ingredients
  

1 lb fresh crab meat (lump or backfin)

4 cups seafood stock

1 cup heavy cream

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1/2 cup dry white wine

2 tbsp tomato paste

1 tsp Old Bay seasoning

1 tsp Worcestershire sauce

Salt and pepper to taste

2 tbsp olive oil

2 tbsp unsalted butter

Chopped fresh chives (for garnish)

Instructions
 

In a large pot, heat the olive oil and butter over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until the vegetables are softened.

    Stir in the minced garlic and cook for an additional minute, making sure not to burn the garlic.

      Add the tomato paste, Old Bay seasoning, and Worcestershire sauce to the pot, stirring well to combine. Cook for another 2 minutes.

        Pour in the dry white wine and let it simmer for about 3-4 minutes until reduced by half.

          Add the seafood stock to the pot and bring to a gentle simmer. Allow it to cook for 15-20 minutes to let the flavors meld together.

            Remove the pot from heat. Using an immersion blender, blend the bisque until it's smooth and creamy. Alternatively, you can carefully transfer the mixture to a blender in batches to purée.

              Return the pot to the heat and stir in the heavy cream and crab meat. Let it heat through for about 5 minutes, being careful not to boil.

                Taste and adjust seasoning with salt and pepper as needed.

                  Serve hot, garnished with fresh chives.
