Ingredients
  

1 pound ground beef (or a mix of beef, pork, and veal)

1 cup breadcrumbs (preferably Italian seasoned)

1/4 cup grated Parmesan cheese

1 large egg

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil

1 medium onion, diced

2 carrots, sliced

2 celery stalks, diced

4 cups beef broth

1 can (14 oz) diced tomatoes

2 bay leaves

1 tablespoon Worcestershire sauce

2 cups fresh spinach

Fresh parsley for garnish

Instructions
 

Prepare the Meatballs:

    In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper. Mix until just combined. Shape the mixture into meatballs, about 1 inch in diameter.

      Brown the Meatballs:

        In a large pot or Dutch oven, heat the olive oil over medium heat. Add the meatballs in batches, browning them on all sides (about 4-5 minutes per batch). Once browned, transfer to a plate and set aside.

          Sauté the Vegetables:

            In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

              Create the Stew Base:

                Pour in the beef broth and add the diced tomatoes, bay leaves, and Worcestershire sauce. Stir until combined.

                  Simmer:

                    Return the browned meatballs to the pot and bring the mixture to a simmer. Cover and let it cook for 30 minutes, stirring occasionally.

                      Add Spinach:

                        In the final 5 minutes of cooking, stir in the fresh spinach until wilted.

                          Serve:

                            Remove the bay leaves and taste for seasoning, adjusting salt and pepper as needed. Serve hot, garnished with fresh parsley.
