Ingredients
  

  • 1 can black beans rinsed and drained
  • 1 cup fresh corn cooked or canned
  • 1 cup cherry tomatoes diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced (any color)
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1/2 teaspoon cumin
  • 1 loaf baguette sliced into 1/2-inch rounds
  • 2 tablespoons olive oil for brushing
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C). Place the sliced baguette rounds on a baking sheet and brush both sides lightly with olive oil.
  • Bake the crostini in the preheated oven for about 10-12 minutes, or until they are golden and crispy, turning them halfway through for even browning.
  • While the crostini are baking, prepare the cowboy caviar by combining black beans, corn, diced tomatoes, red onion, bell pepper, cilantro, lime juice, and cumin in a large bowl. Mix well to ensure even distribution.
  • Season the cowboy caviar mixture with salt and pepper to taste, allowing it to sit for about 10 minutes to let the flavors meld together.
  • Once the crostini are done, remove them from the oven and let them cool slightly. Top each crostini with a generous spoonful of the cowboy caviar mixture.
  • Arrange the topped crostini on a serving platter and garnish with extra cilantro if desired. Serve immediately for best texture.
