Ingredients
  

  • 2 cups cottage cheese preferably low-fat or fat-free
  • 1 cup oats blended into a flour consistency
  • 4 large eggs beaten
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract for flavor
  • 1 tablespoon honey or maple syrup for sweetness
  • 1/4 teaspoon salt to enhance flavor
  • 1 cup milk any type, adjust for desired batter consistency
  • 2 tablespoons coconut oil melted, for cooking
  • fresh fruits for topping, such as berries or bananas

Instructions
 

  • In a large mixing bowl, combine the cottage cheese, oat flour, beaten eggs, baking powder, vanilla extract, honey, and salt. Mix until well blended and smooth.
  • Gradually add the milk to the mixture, stirring until you achieve a thick yet pourable batter. If the batter is too thick, add a little more milk to reach the desired consistency.
  • Heat a non-stick skillet or griddle over medium heat and add a teaspoon of melted coconut oil. Once hot, pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook each pancake for 3-4 minutes on one side until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown. Repeat with remaining batter, adding more oil as needed.
  • Serve pancakes warm, topped with fresh fruits and a drizzle of honey or maple syrup for additional sweetness.

Tip 1: Use a blender for a smoother batter if desired.
Tip 2: These pancakes can be made ahead and frozen; simply reheat in the toaster or microwave.
