  • 2 cups low-fat cottage cheese preferably small curd
  • 6 large large eggs room temperature
  • 1 cup fresh spinach chopped
  • 1/2 cup bell pepper diced, any color
  • 1/4 cup shredded mozzarella cheese
  • 1 teaspoon baking powder for fluffiness
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil for greasing the muffin tin
  • 1/2 teaspoon garlic powder

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with olive oil.
  • In a large mixing bowl, whisk together the eggs, cottage cheese, baking powder, salt, black pepper, and garlic powder until well combined.
  • Fold in the chopped spinach and diced bell pepper gently into the egg mixture until evenly distributed.
  • Pour the mixture evenly into the greased muffin cups, filling each about 3/4 full. Top each with a sprinkle of shredded mozzarella cheese.
  • Bake in the preheated oven for 20-25 minutes or until the egg bites are puffed and the tops are lightly golden.
  • Remove from the oven and let them cool in the pan for about 5 minutes before gently lifting them out with a spoon.
