Ingredients
  

2 cups cottage cheese

1 large cucumber, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh dill, chopped

2 tablespoons olive oil

1 tablespoon apple cider vinegar

Salt and pepper to taste

Zest of 1 lemon

Instructions
 

In a large mixing bowl, combine the cottage cheese, diced cucumber, cherry tomatoes, and red onion.

    In a small bowl, whisk together olive oil, apple cider vinegar, lemon zest, salt, and pepper until well blended.

      Pour the dressing over the salad mixture and gently fold in until everything is evenly coated.

        Add the chopped dill and fold again to combine.

          Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.

            Serve cold, garnished with extra dill if desired.
