Ingredients
  

For the Chicken:

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/2 cup all-purpose flour

2 large eggs, beaten

Salt and pepper, to taste

Oil, for frying (vegetable or canola)

For the Marinade:

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon ginger, minced

1 teaspoon garlic, minced

For the Sauce:

1/2 cup soy sauce

1/4 cup rice vinegar

1/4 cup sugar

1 tablespoon hoisin sauce

1 tablespoon cornstarch mixed with 2 tablespoons water

1 teaspoon red pepper flakes (adjust to taste)

2 teaspoons ginger, freshly grated

2 teaspoons garlic, minced

For Garnish:

Sliced green onions

Sesame seeds

Marinate the Chicken: In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, minced ginger, and garlic. Add chicken pieces and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Coating: In a shallow dish, mix cornstarch and flour together. In another bowl, beat the eggs and season with a pinch of salt and pepper.

      Coat the Chicken: Remove the marinated chicken from the fridge. Dip each piece into the egg mixture, then dredge in the cornstarch-flour mixture, ensuring they're well coated.

        Fry the Chicken: Heat about 2 inches of oil in a large skillet or wok over medium-high heat. Once the oil is hot, gently add the chicken in batches, frying until golden brown and crispy, about 4-5 minutes. Remove the chicken and let it drain on paper towels.

          Make the Sauce: In another pan, add a small amount of oil over medium heat. Add the minced garlic and ginger, cooking until fragrant (about 30 seconds). Stir in the soy sauce, rice vinegar, sugar, hoisin sauce, and red pepper flakes. Bring to a simmer.

            Thicken the Sauce: Stir in the cornstarch-water mixture and cook for an additional 2-3 minutes until the sauce thickens.

              Combine Chicken and Sauce: Add the fried chicken pieces to the sauce and toss until they're well coated.

                Serve: Transfer the General Tso's chicken to a serving platter. Garnish with sliced green onions and sesame seeds. Serve hot with steamed rice or fried rice.
