Ingredients
  

3 cups Rice Krispies cereal

1 cup sweetened shredded coconut

1 package (10 oz) mini marshmallows

3 tablespoons unsalted butter

1 teaspoon vanilla extract

1/4 teaspoon salt

Extra coconut for sprinkling on top (optional)

Prepare Your Pan: Line a 9x13 inch baking dish with parchment paper, allowing some overhang for easy removal. Lightly grease the parchment paper with cooking spray.

    Toast the Coconut: In a dry skillet over medium heat, add the shredded coconut. Toast for about 5-7 minutes, stirring frequently until golden brown and fragrant. Remove from heat and set aside.

      Melt Butter and Marshmallows: In a large saucepan, melt the butter over low heat. Add the mini marshmallows, stirring continuously until completely melted and smooth.

        Flavor it Up: Remove the saucepan from the heat and stir in the vanilla extract and salt, mixing well.

          Combine Ingredients: Pour the Rice Krispies and half of the toasted coconut into the marshmallow mixture. Stir until everything is well-coated and combined.

            Transfer to Pan: Quickly pour the mixture into the prepared baking dish. Using a greased spatula or your hands (dampened slightly), press the mixture evenly into the pan.

              Top with Coconut: Sprinkle the remaining toasted coconut over the top, pressing it gently into the surface.

                Set and Slice: Allow the treats to cool at room temperature for about 30 minutes until they are firm. Use the parchment overhang to lift the treats out of the pan and cut them into squares.

                  Serve and Enjoy: Serve them fresh or store them in an airtight container at room temperature for up to a week.
