2 cups pumpkin puree (fresh or canned)

1 can (400ml) coconut milk

1 onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons red curry paste (adjust for spiciness)

2 cups vegetable broth

1 teaspoon turmeric powder

1 teaspoon coriander powder

1 teaspoon cumin powder

Salt, to taste

Black pepper, to taste

2 tablespoons olive oil

Fresh cilantro, for garnish

Lime wedges, for serving

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

    Add Spices and Curry Paste: Stir in the red curry paste, turmeric, coriander, and cumin. Cook for 2-3 minutes, allowing the flavors to meld.

      Combine Pumpkin and Liquids: Add the pumpkin puree to the pot, mixing well. Pour in the vegetable broth and coconut milk, stirring until everything is well combined.

        Simmer: Bring the mixture to a gentle simmer. Cook for 15-20 minutes to allow the flavors to develop. Stir occasionally to prevent sticking.

          Blend the Soup: Using an immersion blender, puree the soup until creamy and smooth. (If you don’t have an immersion blender, carefully transfer it in batches to a countertop blender, then return to the pot.)

            Season to Taste: Adjust the seasoning with salt and black pepper to taste. If you prefer it spicier, you can add more curry paste.

              Serve: Ladle the hot soup into bowls, garnishing with fresh cilantro and a squeeze of lime juice.
