Ingredients
  

  • 8 ounces fettuccine pasta fresh or dried
  • 2 boneless, skinless chicken breasts chicken breast sliced into strips
  • 1 tablespoon Italian seasoning for seasoning the chicken
  • 3 cloves garlic minced
  • 1 cup heavy cream for the Alfredo sauce
  • 1/2 cup Parmesan cheese freshly grated
  • 2 tablespoons unsalted butter for the sauce
  • 2 tablespoons olive oil for cooking the chicken
  • salt and pepper to taste

Instructions
 

  • Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  • In a large skillet, heat the olive oil over medium heat. Season the chicken strips with Italian seasoning, salt, and pepper. Sauté the chicken for 6-8 minutes until cooked through and golden brown. Remove from the skillet and set aside.
  • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  • Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and the sauce thickens, about 3-5 minutes. If the sauce is too thick, add reserved pasta water as needed.
  • Add the cooked fettuccine and sautéed chicken back into the sauce. Toss everything together until well coated with the creamy Alfredo sauce. Adjust seasoning with salt and pepper as necessary.
  • Serve immediately, garnished with extra Parmesan cheese and fresh parsley, if desired.

Tip 1: For a richer flavor, add a pinch of nutmeg to the Alfredo sauce.
Tip 2: This dish can be made ahead and reheated gently; add a splash of cream to loosen the sauce.
