6 large eggs

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon white vinegar

Salt and black pepper to taste

1/4 teaspoon smoked paprika (plus extra for garnish)

1 tablespoon finely chopped chives (optional for garnish)

Instructions
 

Boil the Eggs: Place the eggs in a single layer in a saucepan and cover with water. Bring to a boil over medium-high heat. Once boiling, cover the pan, remove from heat, and let it sit for 12 minutes.

    Cool the Eggs: After 12 minutes, carefully transfer the eggs to an ice bath (a bowl filled with ice water). Allow them to cool for about 5-10 minutes to halt the cooking process.

      Peel the Eggs: Gently tap each egg on a hard surface and peel it under running water to make it easier. Pat the eggs dry with a paper towel.

        Slice and Remove Yolks: Slice each egg in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Set the egg whites aside on a serving platter.

          Make the Filling: Mash the yolks with a fork until crumbly. Add the mayonnaise, Dijon mustard, white vinegar, salt, pepper, and smoked paprika. Mix until smooth and creamy. Adjust seasoning to taste.

            Fill the Egg Whites: Spoon or pipe the yolk mixture back into the egg white halves, creating a nice mound on top.

              Garnish and Serve: Sprinkle the filled eggs with additional smoked paprika and top with chopped chives, if using. Serve immediately or refrigerate until ready to serve.
