Citrus Garden Crunch Salad with Honey Lemon Dressing

This citrus garden crunch salad with honey lemon dressing is a simple lunch recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

4 cups mixed greens (arugula, spinach, and kale)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 orange, segmented

1 grapefruit, segmented

1 cup radishes, thinly sliced

1/2 cup red onion, thinly sliced

1 avocado, diced

1/4 cup unsalted sunflower seeds

1/4 cup crumbled feta cheese (optional)

For the Honey Lemon Dressing:

1/4 cup honey

1/4 cup freshly squeezed lemon juice

1/4 cup olive oil

1 tsp Dijon mustard

Salt and pepper to taste

Instructions
 

Prepare the Dressing: In a small bowl, whisk together honey, lemon juice, olive oil, and Dijon mustard until well combined. Season with salt and pepper to taste. Set aside.

    Prepare the Salad: In a large mixing bowl, add the mixed greens. Top with cherry tomatoes, cucumber, orange segments, grapefruit segments, radishes, red onion, and avocado.

      Combine: Pour the Honey Lemon Dressing over the salad ingredients. Toss gently to combine, ensuring all the ingredients are coated in the dressing.
