Cinnamon Maple Peach Bread

2 large ripe peaches, diced (about 2 cups)

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup maple syrup

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a standard loaf pan (9x5 inches) and set aside.

    In a medium bowl, combine the diced peaches with 2 tablespoons of granulated sugar. Let them sit while you prepare the batter.

      In a large bowl, whisk together the melted butter, remaining granulated sugar, brown sugar, maple syrup, eggs, and vanilla extract until smooth and well combined.

        In another bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt.

          Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix.

            Fold in the peaches and nuts (if using) until evenly distributed throughout the batter.

              Pour the batter into the prepared loaf pan and smooth the top with a spatula.

                Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                  Once done, remove the bread from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                    Serve warm, toasted if desired, with a drizzle of maple syrup or a pat of butter. Enjoy!
