1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 cup creamy peanut butter

1/2 cup chocolate chips (preferably semi-sweet)

Extra peanut butter for filling

Flaky sea salt for topping (optional)

Instructions
 

Prepare the Oven and Baking Sheets: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Combine Dry Ingredients: In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture, mixing until well combined.

          Mix Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Be careful not to overmix.

            Incorporate Chocolate Chips: Fold in the chocolate chips gently until evenly distributed throughout the dough.

              Form Cookies: Using a tablespoon, scoop out a portion of the dough and flatten it slightly in your palm. Place a teaspoon of peanut butter in the center, then wrap the dough around the peanut butter, sealing it well to form a ball. Repeat with remaining dough.

                Bake: Place the cookie balls onto the prepared baking sheets, leaving space between them. If desired, sprinkle a pinch of flaky sea salt on top of each cookie. Bake for 10-12 minutes, or until the edges are firm but the center is still soft.

                  Cool and Serve: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. For the full lava effect, serve warm!
