2 cups cooked chicken, shredded

1 ripe avocado, mashed

1/2 cup Greek yogurt or sour cream

2 tablespoons chipotle sauce (adjust to taste)

1 teaspoon lime juice

Salt and pepper to taste

1/2 cup shredded cheese (cheddar or pepper jack)

4 slices whole grain or sourdough bread

1 tablespoon olive oil or butter

Fresh cilantro for garnish (optional)

Fresh sliced jalapeƱos for an extra kick (optional)

Instructions
 

In a mixing bowl, combine the shredded chicken, mashed avocado, Greek yogurt (or sour cream), chipotle sauce, lime juice, salt, and pepper. Mix well until all ingredients are thoroughly combined.

    Heat a skillet over medium heat and add the olive oil or butter until melted.

      Spread a generous amount of the chipotle chicken avocado mixture on two slices of bread, then top each with shredded cheese.

        Place the remaining two slices of bread on top to form sandwiches.

          Carefully place the sandwiches in the skillet and cook for about 3-4 minutes until golden brown and crispy.

            Flip the sandwiches and press gently with a spatula. Cook for an additional 3-4 minutes until the second side is golden and the cheese is melted.

              Remove from the skillet, slice in half, and garnish with fresh cilantro and jalapeƱos if desired.
