For the Marinade:

500g boneless chicken, cut into cubes

200g plain yogurt

1 tablespoon ginger-garlic paste

1 tablespoon lemon juice

2 teaspoons garam masala

1 teaspoon cumin powder

1 teaspoon turmeric powder

1 teaspoon chili powder (adjust for spice preference)

Salt, to taste

For the Masala Sauce:

3 tablespoons vegetable oil or ghee

1 large onion, finely chopped

2 teaspoons ginger-garlic paste

2 green chilies, slit (optional)

2 teaspoons coriander powder

1 teaspoon cumin powder

1 teaspoon garam masala

1 can (400g) crushed tomatoes

1 cup heavy cream

1 teaspoon sugar (optional)

Fresh cilantro leaves, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine the yogurt, ginger-garlic paste, lemon juice, garam masala, cumin powder, turmeric powder, chili powder, and salt. Add the chicken cubes and mix well to coat. Cover and marinate for at least 1 hour (or overnight for best results).

    Cook the Chicken: Preheat your oven to 200°C (400°F). Place the marinated chicken on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until cooked through, turning halfway. Alternatively, you can grill the chicken on skewers until charred and cooked through.

      Prepare the Sauce: In a large pan, heat the vegetable oil or ghee over medium heat. Add the finely chopped onions and cook until golden brown. Add the ginger-garlic paste and green chilies; sauté for another 2-3 minutes.

        Spice it Up: Stir in the coriander powder, cumin powder, garam masala, and cook for a minute until fragrant. Then, add the crushed tomatoes and stir. Allow the mixture to simmer for about 10 minutes, until it thickens.

          Creamy Finish: Lower the heat and pour in the heavy cream, stirring well to combine. Add sugar to balance the acidity of tomatoes, if desired. Simmer for additional 5 minutes, allowing the sauce to blend.

            Combine: Add the baked or grilled chicken pieces to the sauce, stirring gently to coat. Allow it to simmer for another 5 minutes.

              Serve: Garnish with freshly chopped cilantro leaves. Serve hot with basmati rice or naan for a complete meal.
