8 oz. egg noodles (or your favorite noodles)

1 lb. boneless, skinless chicken thighs, sliced into thin strips

2 tablespoons vegetable oil

1 bell pepper, thinly sliced (any color)

1 cup snap peas, trimmed

3 green onions, sliced (white and green parts separated)

4 cloves garlic, minced

1 inch ginger, grated

1/4 cup low-sodium soy sauce

1/4 cup teriyaki sauce

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

Sesame seeds for garnish

Salt and pepper to taste

Cook The Noodles: In a large pot, bring water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Start the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken thighs and season with salt and pepper. Sauté for about 5-7 minutes or until the chicken is golden brown and cooked through.

      Add Vegetables: Add the sliced bell pepper, snap peas, and the white parts of the green onions to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

        Flavor It Up: Add the minced garlic and grated ginger to the skillet. Stir-fry for an additional minute until fragrant.

          Combine with Sauce: In a small bowl, mix together the soy sauce, teriyaki sauce, honey (or maple syrup), and sesame oil. Pour this sauce over the chicken and vegetables in the skillet. Stir well to coat everything evenly. Cook for 2-3 more minutes to let the sauce thicken slightly.

            Add Noodles: Add the cooked noodles to the skillet. Toss gently to combine everything, ensuring the noodles are well coated with the sauce. Cook for another 2 minutes to heat through.

              Garnish and Serve: Remove from heat and garnish with the green parts of the green onions and a sprinkle of sesame seeds. Serve hot and enjoy!
