Ingredients
  

For the Chicken Marinade:

1.5 lbs boneless, skinless chicken thighs

3 cloves garlic, minced

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon ground paprika

1 teaspoon ground turmeric

1 teaspoon ground cinnamon

½ teaspoon cayenne pepper (adjust for heat)

1/4 cup plain yogurt

1/4 cup olive oil

Juice of 1 lemon

Salt and pepper to taste

For the Garlic Sauce:

1 cup mayonnaise

3 cloves garlic, minced

Juice of 1 lemon

Salt to taste

1 tablespoon water (to adjust consistency)

For Assembling:

Pita bread or flatbreads

Sliced cucumbers

Sliced tomatoes

Shredded lettuce

Pickles (optional)

Fresh parsley for garnish

Instructions
 

Marinate the Chicken:

    In a large mixing bowl, combine minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, yogurt, olive oil, lemon juice, salt, and pepper.

      Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

        Prepare the Garlic Sauce:

          In a separate bowl, whisk together the mayonnaise, minced garlic, lemon juice, and salt.

            Add a tablespoon of water to achieve your desired consistency. Cover and set aside in the refrigerator.

              Cook the Chicken:

                Preheat your grill or skillet over medium-high heat.

                  Remove the chicken from the marinade and place it on the grill or skillet.

                    Cook for about 7-8 minutes on each side, or until the chicken is cooked through and nicely charred. The internal temperature should reach 165°F (75°C).

                      Remove the chicken from the heat and let it rest for a few minutes before slicing it thinly.

                        Assemble the Shawarma:

                          Warm the pita bread or flatbreads on the grill for a minute.

                            Place a generous amount of sliced chicken in the center of each bread.

                              Top with sliced cucumbers, tomatoes, and shredded lettuce. Add pickles if desired.

                                Drizzle with the creamy garlic sauce and garnish with fresh parsley.

                                  Serve:

                                    Roll up the pita or flatbread to enclose the filling, or serve it open-faced as a platter. Enjoy with your favorite sides or a simple salad.
