Ingredients
  

4 chicken sausages (mild or spicy, according to preference)

2 medium zucchinis, sliced into half-moons

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

1 teaspoon dried Italian herbs (or a mix of oregano, basil, thyme)

Salt and black pepper, to taste

8 oz spaghetti or any pasta of your choice

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

      Cook the Sausages:

        - In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the chicken sausages and cook for about 6-8 minutes, turning frequently, until browned and cooked through. Remove from the skillet and let rest before slicing.

          Sauté the Vegetables:

            - In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and cook for about 30 seconds until fragrant.

              - Add the sliced zucchini and cook for about 5 minutes until they begin to soften.

                - Stir in the cherry tomatoes and red pepper flakes (if using). Cook for another 4-5 minutes, until the tomatoes burst and release their juices.

                  Combine:

                    - Slice the cooked chicken sausages into bite-sized pieces and return them to the skillet with the vegetables. Pour in the reserved pasta water, add the cooked pasta, and sprinkle in the Italian herbs. Toss everything together and cook for an additional 2-3 minutes. Season with salt and pepper to taste.

                      Serve:
