12 oz penne pasta

1 lb chicken sausage, sliced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, chopped

1 zucchini, diced

1 can (14 oz) diced tomatoes, drained

1 cup chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 cup fresh spinach

Salt and pepper to taste

1/2 cup Parmesan cheese, grated

Fresh basil for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and sauté until browned, about 5-7 minutes. Remove and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and garlic. Sauté for 2-3 minutes until the onion is translucent. Add the bell pepper and zucchini, cooking for another 5 minutes until softened.

        Combine Ingredients: Stir in the drained diced tomatoes, chicken broth, Italian seasoning, and red pepper flakes (if using). Bring to a simmer and cook for 5 minutes to allow flavors to meld.

          Add Spinach and Pasta: Add the fresh spinach to the skillet and cook until wilted. Return the browned chicken sausage to the skillet and stir in the cooked penne pasta. Mix well to combine, seasoning with salt and pepper to taste.

            Finish and Serve: Remove from heat and sprinkle with grated Parmesan cheese. Toss gently to incorporate, then plate the pasta. Garnish with fresh basil.
