2 large chicken breasts, thinly sliced

1 cup fresh spinach, chopped

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup sun-dried tomatoes, chopped

1/4 cup fresh basil, chopped

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs

2 eggs, beaten

Olive oil for drizzling

Instructions
 

Prepare the Filling: In a bowl, combine the cream cheese, mozzarella cheese, chopped spinach, sun-dried tomatoes, fresh basil, garlic powder, onion powder, salt, and pepper. Mix until well combined.

    Prepare the Chicken: Lay the chicken slices flat on a cutting board and season both sides with salt and pepper.

      Assemble the Roll Ups: Take a spoonful of the cheese and spinach mixture and place it at one end of a chicken slice. Roll the chicken tightly around the filling, starting from the end where the filling is placed.

        Breading the Roll Ups: Dip each chicken roll in the beaten eggs, allowing excess to drip off, then roll in breadcrumbs until completely coated.

          Bake: Preheat your oven to 375°F (190°C). Place the chicken roll ups on a lightly greased baking sheet. Drizzle olive oil over the top and bake for 25-30 minutes or until golden brown and cooked through.

            Serve: Let the roll ups rest for a few minutes before slicing them into bite-sized pieces. Serve with your favorite dipping sauce or a fresh salad on the side.
