Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken breast

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon ginger, grated

Salt and pepper to taste

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 teaspoon sriracha (adjust for spice level)

1 teaspoon lime juice

For the Poke Bowl:

2 cups cooked sushi rice (or jasmine rice)

1 avocado, sliced

1 cup cucumber, thinly sliced

1 cup shredded carrots

1/2 cup edamame (shelled)

2 green onions, chopped

1 tablespoon sesame seeds

Pickled ginger, for garnish (optional)

Nori strips, for garnish (optional)

Instructions

Marinate the Chicken:

    - In a medium bowl, mix together the soy sauce, sesame oil, rice vinegar, garlic powder, grated ginger, salt, and pepper.

      - Cut the chicken breasts into bite-sized cubes and toss them into the marinade.

        - Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

          Prepare the Bang Bang Sauce:

            - In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.

              Cook the Chicken:

                - Heat a non-stick skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until the chicken is fully cooked and golden brown. Remove from heat.

                  Assemble the Poke Bowl:

                    - In bowls, start with a base of warm sushi rice. Arrange the cooked chicken on top.

                      - Artfully add sliced avocado, cucumber, shredded carrots, and edamame around the chicken.

                        - Drizzle the Bang Bang sauce generously over the top, and sprinkle with chopped green onions and sesame seeds.

                          Garnish and Serve:

                            - Optionally, add pickled ginger and nori strips for an extra touch.

                              - Serve immediately and enjoy your delicious Chicken Poke Bowl!
