2 boneless, skinless chicken breasts, thinly sliced

8 ounces of egg noodles

2 tablespoons vegetable oil

1 cup broccoli florets

1 cup bell peppers (any color), sliced

1 medium carrot, julienned

3 green onions, chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

1/4 cup soy sauce (low sodium)

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Salt and pepper to taste

Sesame seeds for garnish

Cook Noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Prepare Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken breast, season with salt and pepper, and stir-fry until fully cooked, about 5-7 minutes. Remove from the pan and set aside.

      Stir-Fry Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the garlic, ginger, and the carrots, stir-frying for about 1-2 minutes until fragrant. Add the broccoli and bell peppers, stir-frying for another 3-4 minutes until the vegetables are crisp-tender.

        Combine Ingredients: Return the cooked chicken to the pan with the vegetables. Add the cooked egg noodles, soy sauce, oyster sauce, and sesame oil. Toss everything together for about 2-3 minutes, ensuring all ingredients are well combined and heated through.

          Thicken Sauce (Optional): If you prefer a thicker sauce, stir in the cornstarch mixture and cook for an additional 1-2 minutes until the sauce thickens.

            Garnish and Serve: Remove from heat, add in chopped green onions, and toss again. Serve hot, garnished with sesame seeds.
