2 cups cooked chicken breast, diced or shredded

4 cups mixed greens (spinach, arugula, kale)

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup blue cheese crumbles

4 strips of crispy bacon, chopped

2 hard-boiled eggs, sliced

1/4 cup red onion, thinly sliced

1/2 cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

1 tablespoon olive oil (optional)

Prepare the Dressing: In a bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Whisk until smooth and creamy. Set aside.

    Cook the Chicken: If you haven't already prepared the chicken, season it with salt, pepper, and olive oil (if using). Grill, bake, or pan-sear until fully cooked. Once done, let it cool and then dice or shred it into bite-sized pieces.

      Prep the Ingredients: While the chicken is cooking, wash and dry the mixed greens, slice the cherry tomatoes, dice the avocado, chop the bacon, and slice the hard-boiled eggs.

        Assemble the Salad: In a large salad bowl or platter, start with a base of mixed greens. Arrange the chicken, cherry tomatoes, avocado, blue cheese, bacon, eggs, and red onion on top in a visually appealing manner.
