Ingredients
  

For the Chicken:

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

For the Rice:

1 cup jasmine rice (or brown rice)

2 cups chicken broth (or water)

1 teaspoon cumin

1 tablespoon lime juice

Salt to taste

For the Toppings:

1 15-ounce can black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1/2 cup shredded cheese (cheddar or Mexican blend)

1 avocado, diced

Fresh cilantro, chopped

Sour cream (optional)

Lime wedges, for serving

Hot sauce (optional)

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice. Add the chicken thighs, ensuring they are well-coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator for more flavor.

      Cook the Rice:

        - In a medium saucepan, combine rice, chicken broth, cumin, lime juice, and a sprinkle of salt. Bring to a boil, then cover and reduce heat to low. Cook for about 18-20 minutes, or until the rice is tender and the liquid has evaporated. Fluff with a fork and set aside.

          Cook the Chicken:

            - Preheat a grill pan or skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from the heat and allow to rest for a few minutes before slicing into strips.

              Prepare the Guacamole:

                - In a bowl, mash the diced avocado with a fork. Add lime juice, salt, and chopped cilantro to taste. Mix until well combined.

                  Assemble the Burrito Bowls:

                    - In serving bowls, layer the cooked rice as the base. Top with slices of grilled chicken, black beans, corn, diced tomatoes, and shredded cheese.

                      Finish with Toppings:

                        - Add a generous dollop of guacamole on top of each bowl. Garnish with chopped fresh cilantro, additional lime wedges, and a drizzle of hot sauce if desired.

                          Serve and Enjoy:

                            - Serve your burrito bowls while warm, allowing each guest to mix and match their toppings to create their ideal bowl.
