2 boneless, skinless chicken breasts

2 medium sweet potatoes, diced

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

1 cup spinach or kale, chopped

¼ cup feta cheese, crumbled (optional)

¼ cup walnuts, toasted and chopped (optional)

Lemon wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: In a small bowl, mix 1 tablespoon of olive oil, paprika, garlic powder, onion powder, salt, pepper, and thyme. Rub this mixture all over the chicken breasts and set aside.

      Prepare the Sweet Potatoes: In a bowl, toss the diced sweet potatoes with the remaining tablespoon of olive oil and a pinch of salt and pepper. Spread them out on a baking sheet lined with parchment paper.

        Roast: Place the sweet potatoes in the oven and roast for 15 minutes. After 15 minutes, add the seasoned chicken breasts to the baking sheet and return to the oven. Roast for an additional 20-25 minutes, or until the chicken is cooked through and the sweet potatoes are tender and caramelized.

          Sauté the Greens: While the chicken and sweet potatoes are roasting, heat a non-stick skillet over medium heat. Add a splash of water or a tiny bit of olive oil and add the chopped spinach or kale. Sauté for about 3-4 minutes until wilted. Remove from heat.

            Assemble the Bowls: Once cooked, slice the chicken breasts. In two bowls, layer the roasted sweet potatoes, sautéed greens, and sliced chicken.

              Garnish and Serve: Sprinkle crumbled feta cheese and chopped walnuts on top if desired. Serve with lemon wedges on the side for an extra burst of flavor.
