Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

8 ounces cremini mushrooms, sliced

1 small onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Asiago cheese

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, season with salt, pepper, and garlic powder. Cook until the chicken is golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Cook Vegetables: In the same skillet, add the chopped onion and sliced mushrooms. Sauté until the mushrooms are browned and the onions are translucent, about 5-7 minutes. Add minced garlic and dried thyme, stirring for an additional 1-2 minutes until fragrant.

Create Sauce: Lower the heat and pour in the heavy cream, stirring to combine with the mushroom mixture. Allow it to simmer for a few minutes until it starts to thicken slightly.

Add Cheese: Gradually incorporate the Asiago cheese into the cream mixture. Stir until the cheese is melted and the sauce is smooth and creamy. Taste and adjust seasoning with more salt and pepper if needed.

Combine Chicken: Return the cooked chicken to the skillet, stirring to coat it thoroughly in the creamy sauce. Let it simmer for an additional 2-3 minutes to heat through.

Serve: Garnish with freshly chopped parsley before serving. This dish pairs excellently with crusty bread or over pasta/rice.
