- 1 cup packed brown sugar

- 2 large eggs

- 1 teaspoon baking powder

- 1 teaspoon cream of tartar

- ½ teaspoon salt

- 2 teaspoons ground cinnamon

- For the Cinnamon Sugar Topping:

- ¼ cup granulated sugar

- 1 tablespoon ground cinnamon

1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, allowing some overhang for easy removal, and lightly grease it.

    2. Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

      3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cream of tartar, salt, and 2 teaspoons of cinnamon until evenly mixed.

        4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix; it's okay if there are a few small lumps.

          5. Spread Batter: Pour the cookie dough into the lined baking pan, using a spatula to spread it evenly across the pan.

            6. Prepare Cinnamon Sugar: In a small bowl, combine the ¼ cup granulated sugar and 1 tablespoon ground cinnamon. Sprinkle this mixture evenly over the top of the cookie dough in the pan.

              7. Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set. A toothpick inserted into the center should come out clean or with just a few crumbs attached.

                8. Cool and Cut: Allow the bars to cool in the pan for about 10-15 minutes. Use the parchment paper to lift the bars out of the pan and place them on a wire rack to cool completely before slicing into squares.
