Ingredients

2 cups mascarpone cheese

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup amaretto liqueur

1 cup cherry juice (preferably from fresh or canned cherries)

1 teaspoon almond extract

24 ladyfinger cookies

1 cup fresh cherries, pitted and halved (for layering and garnish)

Unsweetened cocoa powder (for dusting)

Dark chocolate shavings (for garnish)

Instructions

Prepare the Cherry Mixture: In a bowl, combine the cherry juice with the amaretto liqueur and almond extract. Stir well and set aside.

Make the Mascarpone Cream: In a large mixing bowl, whip the heavy cream until it holds soft peaks. In another bowl, mix the mascarpone cheese with powdered sugar and vanilla extract until smooth and creamy. Gently fold the whipped cream into the mascarpone mixture until well combined.

Dip Ladyfingers: Quickly dip each ladyfinger into the cherry and amaretto mixture for just a second, ensuring they are coated but not soggy. Arrange a layer of dipped ladyfingers at the bottom of a 9x13 inch dish.

Layer the Tiramisu: Spread half of the mascarpone mixture over the layer of ladyfingers. Add half of the fresh cherries evenly on top of the mascarpone layer.

Repeat Layers: Add another layer of dipped ladyfingers followed by the remaining mascarpone mixture. Top with the rest of the halved cherries.

Chill: Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to let the flavors meld and the dessert to firm up.

Serve: Just before serving, dust the top with unsweetened cocoa powder and garnish with dark chocolate shavings and additional cherries if desired.
