Ingredients

1 cup elbow macaroni

1 cup shredded sharp cheddar cheese

1/2 cup crumbled Cheetos Flamin' Hot

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup milk

1/2 cup cream cheese, softened

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup panko breadcrumbs

1/4 cup chopped green onions (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners for easy removal.

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente, about 8-10 minutes. Drain and set aside.

Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, sprinkle in the flour and whisk constantly for about 1 minute to create a roux.

Add Milk & Cheese: Gradually pour in the milk while continuing to whisk, ensuring no lumps remain. Cook for about 3-4 minutes until the mixture thickens slightly. Stir in the cream cheese until melted and smooth.

Season the Sauce: Add the shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until everything is well combined and the cheese has melted.

Combine Macaroni & Cheetos: Fold the cooked macaroni and crumbled Cheetos Flamin' Hot into the cheese sauce until evenly coated.

Prepare for Baking: Spoon the mac and cheese mixture into the prepared muffin tin, filling each cup about 3/4 full.

Top with Panko: In a small bowl, mix the panko breadcrumbs with a touch of melted butter and a few extra crumbled Cheetos for added flavor and crunch. Sprinkle this mixture on top of each muffin.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden and crispy.

Cool & Serve: Remove from the oven and let cool for about 5 minutes. Carefully remove the muffins from the tin and garnish with chopped green onions before serving.
