Cheesy Roasted Vegetables – Easy Oven Baked Veggie Side Dish

This cheesy roasted vegetables – easy oven baked veggie side dish is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

2 cups of cauliflower florets

2 cups of broccoli florets

1 cup of sliced bell peppers (red, yellow, and green)

1 cup of cherry tomatoes, halved

1 medium zucchini, sliced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large mixing bowl, combine the cauliflower, broccoli, bell peppers, cherry tomatoes, and zucchini.

      Season: Drizzle the olive oil over the veggies. Sprinkle with garlic powder, onion powder, Italian herbs, salt, and pepper. Toss until the vegetables are evenly coated.

        Roast: Spread the seasoned vegetables evenly on a large baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, or until they are tender and lightly browned, stirring halfway through.

          Add Cheese: Remove the baking sheet from the oven and sprinkle the mozzarella and Parmesan cheese over the roasted vegetables. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

            Serve: Once done, remove from the oven and let it cool slightly. Garnish with fresh basil or parsley if desired. Serve as a delicious side dish!
