Ingredients

1 cup strawberries, hulled and sliced

1 cup blueberries

1 cup pineapple chunks

1 cup kiwi, peeled and sliced

1 cup grapes, halved

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped topping (at room temperature or thawed)

Zest of 1 lemon

Juice of 1/2 lemon

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Ingredients: Start by washing all the fruits thoroughly. Hull and slice the strawberries, peel and slice the kiwi, and halve the grapes. Set aside in a large mixing bowl.

Make the Cheesecake Mixture: In a separate mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer, beat on medium speed until smooth and creamy with no lumps. Add the lemon zest and lemon juice, mixing until well incorporated.

Fold in the Whipped Topping: Gently fold the whipped topping into the cream cheese mixture using a spatula. Be careful not to deflate the whipped topping; you want a light and airy consistency.

Combine with Fruits: Pour the cream cheese mixture over the prepared fruits in the large mixing bowl. Gently fold the fruits into the cheesecake mixture until evenly coated, ensuring all the fruit gets a taste of the luscious cheesecake flavor.

Chill: Cover the mixing bowl with plastic wrap and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together beautifully and enhances the overall taste.

Serve: Before serving, give the salad a gentle stir. Scrape it into a serving bowl or individual cups, and garnish with fresh mint leaves for a pop of color and flavor.

Enjoy this refreshing Cheesecake Fruit Salad as a delightful dessert or a sweet party treat!
